Since moving to New York, Chef Sakai has made a name for himself in some of the city's most revered sushi establishments, including Sushiden, Sushi Ginza Onodera, Sushi Nakazawa, and Kyo Ya. His philosophy is rooted in the purity of ingredients, honoring seasonality while allowing each piece of sushi to speak for itself.
